My Favorite Summer Salad

If you know me, you know I love to eat and I love to cook. I’m bringing you a delish salad I made this past weekend (and honestly cannot wait to make it again). Is making a salad cooking? Technically, I cooked the chicken for it, so maybe it’s a salad I’ve prepared. Whatever it is, it’s delicious and I think you should try it!

Ingredients:
-Spring mix lettuce
-One chicken breast per person
-One fresh, ripe peach per person
-Feta cheese
-Trader Joe’s citrus garlic seasoning
Lime white balsamic
Good olive oil
-Candied pecans
-Cashews

Dressing:
-Balsamic & olive oil of your choice (sadly, I don’t measure and just go with my gut)

For the chicken:
I use my favorite pan and drizzle my olive oil into the pan. Once it’s heated, I add the chicken, and generously shake the Trader Joe’s seasoning on it. Add a hefty pour of the lime balsamic (just trust me). Cook on medium-high heat for 4 minutes, then reduce heat and remove. I like to chop the chicken & then add back to the pan; cooking on high for another 90 seconds or so. This gets the chicken a good glaze from the balsamic; I love this taste. Remove from heat and let cool.

For the peaches:
I love my square grill pan for things like this. Over medium heat, I place sliced, ripe peaches flesh side down onto the pan. Cook each side until they’re soft and light grill marks are on it (it’s just a few minutes total). Remove from heat.

Assemble your salad. I love to set the stage for my salad: I put all of my ingredients into my prep bowl and like to look at proportions of what I have. After, I drizzle my dressing. Finally, I chop. This is THE BEST salad chopper. If you buy one thing I recommend, buy this salad chopper. Trust me.
