I hope your holiday weekend has been just lovely and you’ve been getting some time to relax and reflect.
I realized with how much I cook at home, I don’t do my best at sharing my favorite recipes over in this little corner of the internet. I’m here today to share one of my staple meals: green curry.
This is less of a recipe and more of a guideline. Once you find what ingredients you want to add, you can adjust and flow.



This is my loose recipe, I will change the proteins and swap out the peppers if there’s a really good veggie at the West Ashley Farmer’s Market, or if I have a squash/broccoli/zucchini craving. If I’m making it for just myself, I will level up the spice with the Sambal Oleek, but I hold back if I’m serving to others. The coconut rice: a constant staple in my cooking and that recipe can be found here (it’s the EASIEST thing to make!)
I truly made this last night while listening to this audiobook I can’t get enough of. Such a lovely way to wind down a Sunday evening, even on a holiday weekend. I love to cook on Sundays. If you make this, or a version of it, please let me know!
